Zesty Pro-Health Red Potato Stir-Fry
Cut potatoes in 1/2 inch cubes. Place in medium-sized pot with salted water and cover. Bring to a simmer. Cook until tender when pierced with a table knife. Once done, place on paper towels and dry completely. While potatoes are cooking, mince the ginger and garlic. Cut bell peppers into thin strips, and onions into one-inch pieces. Heat wok or large skillet on medium-high heat and add oil. Carefully add potatoes and cook until golden brown. Remove potatoes and add pepper flakes, ginger, garlic, yellow pepper and onions. Stir while cooking for 3-4 minutes, until peppers are just starting to soften. Add potatoes back and season with salt and black pepper. Serve while hot.
