Twice Baked Sweet Potato with Crumble Topping
Crumble: Mix the nutmeg, oats, sugar and salt in a bowl. Take the cold butter and cut into small cubes. With your hands rub the butter into the mix. The mixture should be even. Place in refrigerator.
Potato: When shopping pick out three potatoes about 12-13 ounces each. Two of these will be your shells. Microwave the potatoes for about 10 minutes or until they just turn soft. (Or you may bake them at 350 degrees till tender) Let them cool to the touch. Slice in half lengthwise. Scoop out the middle into a bowl leaving just enough flesh of the potato in the skin to form a shell. Mix the remaining ingredients with the potatoes with a hand mixer till smooth. Fill 4 of the halves (shells) with the potato mix. Top each with the crumble mix. Bake at 400 degrees for 20-25 minutes or until topping is brown and crispy.
