Pro-Health Smart Bite Indigo Blue Potato Breakfast Burrito
Place potatoes in a bowl with garlic granules, 1 tsp salt and 1 Tbl olive oil. Mix together then bake in a 400 degree oven for about 25 minutes. Once the potatoes are cooked let cool to room temperature. Cook the sausage in a skillet on medium heat. Once cooked though cut in 1⁄2 inch pieces and return to skillet to brown and crisp the cut edges. Remove from skillet and drain on a paper towel. Once the potatoes are cool quarter and brown in a skillet with 2 Tbl of olive oil till crisp. Crack eggs into a small bowl and beat with a pinch of salt and pepper. Scramble eggs in a nonstick skillet. Warm each tortilla in a clean skillet for about 30 seconds a piece on medium heat. Fill each tortilla with potatoes, sausage, cheese, egg and Pico. Fold one end of the tortilla in, then fold over one side till it just covers the filling and roll to close the burrito. Serve with salsa on the side.
